If cheese is at the top of your 'favorite food list', then you must carefully (and I mean, thoroughly) read this article. Cheese curd is yet another variety to the ever growing number of cheese by-products. But before tasting this delectable food, let us first know how it came to be and why it's here to stay.

Cheese is believed to be discovered by an unknown nomad. This nomad lived in the Middle East and was, as legend would say, on his way to a very long journey. He prepared for it by pouring in lots of milk in a saddlebag. Unfortunately for him (and fortunately for cheese-lovers out there), the milk curdled after several hours of riding under the sun. What was supposed to be milk turned into white curds with liquid!

The science behind this is, the saddlebag has an enzyme (rennin) that causes coagulation. The rennin enzyme can be found in the bag because it is made from the stomach of young cows. Well, the rest as we all love to say, is history.

Cheese curds, although believed to have existed much earlier, were reportedly discovered by accident by some cheese scientists (UW) in their attempt to create a pure cholesterol product that still has the squeaking sound. The lab rats who consumed the first cheese curds then became capable of beer drinking.

A New York Times article in 1911, on the other hand, referred to a very old Celtic song (about the 12th century) where cheese curds were mentioned. This song was entitled: 'Visions of MacGonlannee'. You now have a rough idea of how old cheese curds are, haven't you?

While most cheese would take about 60 days to coagulate, cheese curds can be 'harvested' way, way before they become cheeses. So, in essence, cheese curd is 'premature cheese'.

Cheese curds are fresh by products of cheddar cheese (or at least most of them are; some can be made from mozzarella, Colby or Monterey jack cheeses). And the best way to eat them is by eating them fresh. The good news? Canada and the United States have many stores that sell cheese curds in retail. There are also a lot of factories that manufacture them (so don't worry about running out of cheese curd stocks!).

The top two places that produce and sell cheese curds are: Quebec and Wisconsin. So, if you are not from one of these two places or are far from factories that produce cheese curds, then they could be foreign to you.

The best part of eating them is to hear the 'fresh' squeak. It takes only twelve hours before they become unfresh. Another twelve hours after that and they are nothing but unusable cheese.

Fresh cheese curds are about the size of peanuts and are usually orange in color. It tastes much like other dairy products and about as firm as most cheeses are. The difference is, cheese curds have rubber-like texture as compared to cheese that has the texture of clay. And unlike most junk foods that are crunchy, cheese curds are moist and cool while having the same salty taste of your regular snacks.

There are several ways of serving cheese curds. In Wisconsin, Iowa and Minnesota, cheese curds are usually deep-fried and served in fairs and carnivals and sometimes in bars or fast food chains (Culver's and A&W restaurants are examples of this). These deep-fried treats are first covered with batter (beer-based) such as what is used in onion rings. In the absence of this type of batter, the usual breading is used. The good thing about this? It tastes much like mozzarella cheese sticks.

Another popular way of eating cheese curds is: poutine. This is a French-Canadian recipe that tops French fries with cheese curds that's also oozing with mouth-watering gravy. Yet other ways of consumption is by sprinkling powdered cheeses that are flavored: garlic, jalapeno, Cajun, chipotle, pesto, paprika, butter, pepper or lemon) then serving them like potato chips.

Cheese curds are definitely rare. As mentioned, there are just a handful of places where they are produced and enjoyed. Although cheese curds are not available for everyone to enjoy, for those who do, let us say you are the lucky ones on the planet!

Affect of Food on our Relationships

Did you know that how certain food we choose could have adverse impact on our relationships with the people around us?

We make many choices in our lives without ever questioning "why?" A choice like what we eat is one of them. Perhaps we simply continue to eat in the way we were raised; perhaps we automatically adopt our parents' choices. Or, perhaps we go against how we were raised: our parents made one choice, so we will make the opposite. In either case, we rarely take the time to truly see why we are eating what we eat.

We already know what we eat affects our physical health. If we continue to eat a healthy, balanced, low-fat, low-sugar diet, we will have leaner bodies, less disease, and longer life as a general rule. Likewise if we continue to eat a diet high in fat, sugar and chemical additives, we will have overweight bodies, more disease, more visits to doctor, shorter life so on and so forth. This is not true for all people, but on the average it is common knowledge. But what I am going to talk about is an indirect connection between our food habits and relationships with people around us.

The connection is:

Our food choices can affect our emotional state;
Our emotional state influences our actions;
Our actions affect our relationship;
Our relationships affect our physical and emotional state;
Our emotional state and physical health can affect our food choices.

Our Food Choices Affect Our Emotional State

Many factors play a role in our emotional state. Our family history, health history, job status, and relationships all affect our emotional state. But one factor we generally overlook is the food that can affect our emotional state, our moods. My own experience demonstrates that when I eat certain foods, various emotional states tend to follow on a consistent basis. While this may not be the case for you, it's worth considering.

Let's look at depression as an example. Many people who suffer from depression do so because of a chemical imbalance or because of specific circumstances in their lives. But let's say continuous poor food choices have led to weight gain or illnesses that result in isolation or irritability. And that, in turn, has perhaps contributed to a poor self-image. It is very possible, then, that these factors may make a person depressed. When talking about personal experience, ice creams and chocolates has always been great elevated mood of my wife and mine. The reverse may also be true. People who make healthy food choices and have a strong self-image will most likely be more joyful. This may even be true if they have a tendency toward depression. Foods high in fat, sugar, and chemical additives may contribute to a host of negative emotions, while foods rich in nutrients-fresh fruits and vegetables, grains, and lean meats-may contribute to positive emotions. Perhaps this next step in the connection is as obvious to you as it was to me. What we don't know is that food had contributed to those emotions.

These emotions drive our thoughts and eventually our actions. Thoughts and emotions are so mixed that they drive our actions, by instinct, and in an unconscious way. If I am in a confused state, my thinking would be affected and I would think and act differently.

So our emotions can provide us with information about ourselves, and about our behavior and about the behavior of others If we are generally ruled by joy, peace, patience, and a positive attitude, our actions would be benevolent, friendly, helpful and understanding. On the other hand, if we harbor negative emotions, bad temper, depression, then we exhibit uncontrolled anger, pessimism, anxiety, or bad moods on a regular basis.

Again, this information is probably not surprising. What is a surprise is that the foods you eat may indirectly be affecting the way think and act.

Our Actions Affects Our Relationships

Obviously the behaviors driven by negative emotion are bound to make adverse affect on their relationships. People with these emotional traits will be more likely to have conflicts with their spouses, children, and even coworkers. Similarly, people with positive emotional state don't have to try harder for keeping the relation stronger.

Again, this information is probably not surprising. What is a surprise is that the foods you eat may indirectly be affecting the way you get along with the people you love.

Our Relationships Affect Our Physical Health and Emotional state

Numerous studies released in the past few years prove that people with poor and/or limited relationships and social connections are more likely to have poor physical health. Similarly, people with strong and/or numerous relationships and social connections are more likely to have good physical health.

How does this relate to the connection between food and love? It works like this: Foods affect our emotions, emotions affect our actions, actions affect our relationships, and relationships affect our physical health and emotions. Therefore, the food choices we make-whether good or bad-may very well play a role in our relationships, as well as our physical health and emotional state.

Our Emotional and Physical Health Affect Our Food Choices

That brings us to concluding piece of the connection. Our emotion and physical health affect our food choices. Let me give you a picture of how this looks.

So food choices affect our emotions; our emotions affect our actions; our actions affect our relationships; our relationships affect our physical health and emotions; and our emotions and physical health affect our food choices.

When people suffer from poor emotional and physical health, they don't love themselves nor love their body. Most people find other ways to recuperate. They often turn to quick-and-easy substitutes. But Food and Love are one of them.

If we choose healthy foods, we are in the best possible position to have healthy bodies and healthy relationships. If we choose unhealthy foods, we make ourselves vulnerable to having unhealthy bodies and unhealthy relationships, which can lead us to even more unhealthy food choices.

Most people want to make healthy choices, but as I said earlier we simply continue to live in the way we were raised.

When I think back on my childhood, I don't have any memories of my parents hosting a party other than the occasional holiday. I don't even remember them having any friends over for dinner. In my adult life, I have come to learn that the idea of playing hostess is very stressful for my mother. I have also learned that she is not alone in feeling this way.

When I got married and set up my own home, I found that I enjoyed entertaining friends and family, but with no motherly advice to work with, I didn't have a clue whether or not I was "doing it right." What I figured out through trial and error is that there really is no right or wrong way to entertain, but there are a few things I have learned that can turn entertaining from a stress-inducing nightmare into an enjoyable event.

The single most important thing I have learned is that the comfort of your guests is key. At a party, the guests take their cues from the host or hostess. If the host is frantic and obviously stressed, you can bet that their guests will not feel comfortable. Therefore, you must remain calm, cool and collected in order to make your guests feel at ease. How can you do that and still attend to all of the necessary details? The answer is prior planning. Here is how you can plan the perfect party every time. The first step is to plan the type of party you would like to have: Do you want a cocktail party or a dinner party? Do you want the meal to be formal or casual? Will the food be served at the table or will you offer a buffet? The answers to these types of questions will help you determine the number of people to invite, as well as who those people should be. For example, you wouldn't want to invite acquaintances that do not get along well if the party will be more intimate and there will not be many other people there for them to interact with. The answers to these questions will also help you decide upon the menu later. Start a party journal and write the answers to these questions in it.

The next step is to plan the guest list. Invitations should be mailed approximately three weeks prior to the date of the party. Write down the names of all invitees in your party journal, leaving a space for their RSVP. This way you will know at a glance how many guests you are expecting. Choose your RSVP deadline carefully, making sure to allow enough time to properly plan the menu. Keep in mind that many people overlook RSVP deadlines. If your deadline passes and there are people you have not heard from, consider your situation in deciding what to do. If your party is a more casual open-house type event, simply plan for everyone to attend to make sure you have enough for all who show up. However, if your party is a more formal affair and you need to know how many places to set at the table, you may want to consider following up with a telephone call. If you choose to call, keep the conversation casual and upbeat. Do not offend your guests by pointing out that they missed the deadline to respond. Simply try to ascertain the answer to your question through casual conversation.

Once you know how many guests you are expecting, the next thing you want to do is plan the menu. When planning the menu, try to choose as many dishes that can be prepared ahead of time as possible. Choose dishes that fit well with the theme of your party. If you are having a cocktail party you will only need appetizers and you will want to choose foods that do not require a plate or utensils to eat. This will allow your guests the ability to mingle easily without trying to juggle a plate in one hand and a drink in the other. If you are offering a sit down meal you may opt for more elegant dishes. Keep in mind that you can still achieve elegance without spending days in the kitchen. Many of these dishes can be prepared in advance and some are actually better that way. Write down your menu selections in your party journal and make note of any preparation instructions that will help you determine when to get started on each dish.

Now that you have your menu established you can start planning the set up for the party. Will you need to set the table and, if so, for how many? Which tablecloth, napkins, dishes and centerpiece would you like to use? Do you need to purchase disposable cocktail plates and napkins? Write all of this information in your journal so that all of the thinking is done ahead of time.

The final step is the party calendar. Start one week prior to the event and write down any tasks that can be accomplished each day leading up to the day of the event. The idea is to leave as little as possible for the day of the party, allowing yourself time to relax, get dressed and get excited for your guests to arrive without running around trying to get everything done at the last minute. The calendar should include things such as shopping for paper goods and decorations, grocery shopping, house cleaning, setting the table, and menu preparations. If you do a little bit each day you will be ready for your party before you know it.

All of this planning and list making may seem like a lot of work, but once you realize how much fun it can be to actually attend your own parties, rather than slaving away in the kitchen while all of your guests are enjoying themselves you will never throw a party any other way.
