Texas ranchers thought it would be funny (and profitable) to send the toughest cuts of meat East at prime rates while they kept the more tender steaks and roasts for themselves.

They pictured their brothers in the East gnawing away on shoe leather while they enjoyed tender and juicy steaks. Boy, were they mistaken!

Since the price of the brisket was SO outrageous, people started talking about this wonderful Texas import and then they began visiting Texas looking to try some authentic beef brisket for themselves.

With that, the Texas ranchers sure had their work cut out for them. They had to figure out how to make shoe leather taste great or risk losing all their credibility with their buyers back East.

Using their natural barbecue instincts, the Texans cooked up the brisket the only way they knew how, low and slow, adding rubs and sauces along the way, and when they were done, they made a magnificient discovery - the beef brisket was even better than their roasts and steaks!

The relationship with their fellow Americans was saved, a second Civil War was averted, and they all lived to barbecue another day!

Just goes to show that those Eastern boys sure know their meats and those Texas boys can barbecue just about anything, even the soles of their shoes!

So if ever you�re up to trying your own hand at smoking up some great brisket, here's the recipe for Texas Style Beef Brisket from the book, "Barbecue Secrets Revealed!," available at ...

Texas Style Beef Brisket

12 -15 pound Brisket
Cajun seasoning or dry rub
Your favorite BBQ sauce
Salt and pepper

Begin by mixing together the Cajun seasoning, salt and pepper and rub into the brisket.

Get the charcoal going in the smoker and add a large chunk of hickory wood, which has soaked in water over night.

Put the meat on and keep the temperature between 150 and 250 degrees during the entire smoking cycle.

Put a water pan under the meat and add quartered potatoes, celery, onion and carrots to the water.

Cook the meat for about 3 1/2 hours in the middle of the smoker and then turn the meat so the other side is towards the firebox. Continue cooking for another 3 1/2 hours.

After seven hours of total cooking has elapsed, baste both sides with barbecue sauce and wrap the brisket in aluminum foil. Continue cooking the meat another 4 hours.

Do not let the smoker get too hot! A long cooking time at low temperatures (150-250 degrees) is what will turn that tough piece of meat tender and juicy.

After cooking for a total 10-12 hours, remove the meat and let stand for 10-15 minutes. Carve or gently pull the tender meat and it�s ready to impress your guests!

In case you're in need of a favorite Cajun rub and BBQ sauce, here are two of my favorites from the book:

Cajun �Take No Prisoners� Spice Rub

1 cup Sweet paprika
1 tsp Paprika
1 tbsp Black pepper
1 tbsp White pepper
3 tbsp Cayenne
1 tbsp Garlic powder
1 tbsp Onion powder
1 tbsp Salt
1 tbsp Rosemary

Blend spices together and rub into meat.

Amazing All Purpose Barbecue Sauce

1 cup Catsup
1 tbsp Worcestershire sauce
2 dashes Bottled hot pepper sauce
1 cup Water
1/4 cup Vinegar
1 tbsp Brown sugar
1 tsp Salt
1 tsp Celery seed
1 tbsp Minced onions

Combine ingredients in slow-cooking pot. Cover and cook on low 2 to 3 hours.

Makes 2 to 2 1/4 cups sauce.

Why Do I Have Sugar Cravings?

Consuming sugar temporarily elevates the levels of certain neurotransmitters in our bodies. Do you know what neurotransmitters are? They are �feel-good� chemicals. Two of the major �feel-good� chemicals released by eating sugar are:

1. Dopamine, which releases chemicals including endorphins that give us a feeling of pleasure
2. Serotonin, which produces a feeling of well being.

We also tend to eat sugary treats for a quick rush of energy to get us through the day. Of course we also enjoy the sweet taste of sugar. Eating sweet treats like a candy bar or a cookie unconsciously brings back simpler more enjoyable days of our childhood.

Grabbing a sugary treat is a common stress response for many adults. It�s a behavior we have been practicing since we were children. When we had a rough day at school, mom would fix it with a plate of homemade cookies and a glass of milk. Now when we are stressed, we run to the vending machine or grab a cheesecake on the way home.

Is Sugar Really Dangerous Or Addictive?

Yes and No. Our body needs limited amounts of sugar as a quick source of energy, but not in the amounts our society as a whole has been consuming sugar. Craving sweets is also often an indication of a lack of certain nutrients such as chromium, carbon, phosphorus, sulphur and tryptophan. Let�s take a look at what foods you should be eating to make sure you get enough of these nutrients.

Chromium � eat broccoli, grapes, cheese, dried beans and chicken

Carbon � eat fresh fruit

Phosphorus � eat chicken, beef, liver, poultry, fish, eggs, dairy, nuts, legumes and grains

Sulphur � eat cranberries, horseradish, cruciferous vegetables, kale and cabbage

Tryptophan � eat cheese, liver, lamb, raisins, sweet potato and spinach.

If you find yourself drawn to sweets as a response to stress, your first step of action should be to try to eliminate the stress. If you have an argument with your spouse, talk things out. If you are stressed in your job, schedule a meeting with your boss to see if you can get more time, more resources or an assistant.

Without a doubt, Ed Levine knows his pizza. He is an author, food critic and full time pizza fanatic. Levine just can't get enough pizza.

Levine takes his pizza seriously. He consumed over a thousand slices in twelve months, in twenty states and several countries. The result of this journey, Pizza A Slice of Heaven, is a volume dedicated to America's favorite food.

He reviews all manner of pizza and pizzerias. He tries the fantastic as well as the mediocre. He begins his quest at the source of all pizza, Naples, Italy. He samples pizza from the East to the West Coast and many places in between. His focus is on pizza so memorable that his heart pounds just thinking about it. Levine has developed his own rubric for rating pizza. He notes the criterion is the fuel source, the oven, the crust, the mozzarella, the sauce and the balance.

This book is more than just a review of great pizza. Within these pages are adventurous tales filled with pizza obsession, passion, heartbreak, and enlightenment. You will even find a cure for the dreaded Pizza Burn. Pizza Burn occurs when searing hot cheese meets the unprotected roof of your mouth. He also includes a pizza recipe for the home cook. Ed Levine has done his homework.

Levine is wise enough to enlist the assistance of such luminaries as Chefs Mario Batali and Peter Reinhart (American Pie: My Search for the Perfect Pizza), Nora Ehron, Jeffery Stiengarten and many others. These authors add much varied flavor to the different tastes in the book. In some ways this book is a collaborative effort full of Pizza anecdotes and reviews, however, Levine pulls it altogether in the end.

Levine is very straight forward about his pizza picks. He is a New Yorker, and his choices have a New York spin. He feels (as many New Yorkers feel), New York is the center of the pizza universe. He is not a pizza elitist, however.

He nods his head to the famed New Haven, Connecticut Pizza; Pepe's, and Sally's Apizza. He does acknowledge Wooster Street in New Haven, as being a stronghold of some of the best pizza in America. He searches New York, Boston, Chicago, The Mid West, The South, The Southwest, and The West Coast. He even touches on South American Pizza. He takes a stab at Bar Pizza, Frozen Pizza, Chain Pizza and Internet Pizza (pizzatherapy.com, a web site based in Hawaii, is referenced).

Levine rates Hawaii pizza, by enlisting the assistance of Joan Namkoony and John Heckathorn from Honolulu Magazine. As part of their research, they ordered fourteen pizzas from Kahala to Mapunupuna and brought them back to their office for a pizza party. After a blind-test-side-by-side comparison, one pizza came out on top: Antonio's New York Pizzeria. Owners (and cousins) Anthony Romano and Joe Tramantano are transplanted from Connecticut carrying on the thin crust pizza tradition here in Hawaii.

I recommend Pizza: A Slice of Heaven! without hesitation or reservation. This is a wonderful book for anyone who ever enjoyed a pizza. Levine does not sugar coat any of his reviews or recommendations. The book is totally opinionated and therein lies it's charm.

Levine is already braced for controversy and asks readers to contact him with additional suggestions for future editions of Pizza: A Slice of Heaven!
