Sugar intake is a real concern for people who�ve had gastric bypass, in fact most patients fear sugar. The foremost fear isn�t weight gain, it�s dumping. Foods containing sugar pass too quickly through the small pouch, they are rapidly absorbed and cause insulin levels to drop resulting in dumping.

Very unpleasant. Instead of taking chances with sugar many of us reach for �sugar free� sweets or diabetic candy to satisfy our sweet tooth. Many of these products contain sugar alcohol, a natural sweetener derived from fruits and berries. Unlike artificial sweeteners that contain no calories, sugar alcohol has about half the calories of sugar. Diabetics are able to have food with sugar alcohol because it�s converted more slowly to glucose and require very little insulin to be metabolized.

While sugar alcohols are low in calories and slow to convert to glucose, the down side is they can cause gas, bloating and diarrhea. I learned this the hard way. One day that devil we call temptation seduced me into buying a bag of sugar-free jelly beans. Jelly beans are dangerous because they are little bites of soft food which means a gastric bypass patient can eat too much volume. I ate the entire bag in about an hour (true confessions of the closet snacker). I soon became uncomfortable with a small tummy ache. The tummy ache turned to bloating, cramping and gas. Extreme cases of all three symptoms. Painful �take me to the hospital I think I�m gonna explode� symptoms. It took a couple of days for my body to return to normal, a couple of stressful and uncomfortable days.

The jelly beans I ate contained Mannitol, a common sugar alcohol extracted from seaweed. I know they contained Mannitol because I read the package mid-way through the crisis. The package contained this warning, �Warning: excessive consumption can cause a laxative effect� Fine time to be reading labels I told myself! Mannitol is found naturally in pineapples, olives, asparagus, sweet potatoes and carrots. It�s about 60% as sweet as sugar, so more product is needed to replicate the sweetness of sugar. �Mannitol lingers in the intestines for a long time and therefore causes bloating and diarrhea.� Yup! That�s exactly what happens all right.

What other names are sugar alcohols called?

Sorbitol is found naturally in fruits and vegetables. It is manufactured from corn syrup. Sorbitol has only 50 percent of the relative sweetness of sugar which means twice as much must be used to deliver a similar amount of sweetness to a product. It has less of a tendency to cause diarrhea compared to mannitol. It is often an ingredient in sugar-free gums and candies.

Xylitol is also called �wood sugar� and occurs naturally in straw, corncobs, fruit, vegetables, cereals, mushrooms and some cereals. Xylitol has the same relative sweetness as sugar. It is found in chewing gums.

Lactitol has about 30-40 percent of sugar's sweetening power, but its taste and solubility profile resembles sugar so it is often found in sugar-free ice cream, chocolate, hard and soft candies, baked goods, sugar-reduced preserves and chewing gums.

Isomalt is 45 - 65 percent as sweet as sugar and does not tend to lose its sweetness or break down during the heating process. Isomalt absorbs little water, so it is often used in hard candies, toffee, cough drops and lollipops.

Maltitol is 75 percent as sweet as sugar. It is used in sugar-free hard candies, chewing gum, chocolate-flavored desserts, baked goods and ice cream because it gives a creamy texture to foods.

Hydrogenated starch hydrolysates (HSH) are produced by the partial hydrolysis of corn. HSH are nutritive sweeteners that provide 40 - 90 percent of the sweetness of sugar. HSH do not crystallize and are used extensively in confections, baked goods and mouthwashes.

Should Gastric Bypass Patients indulge their sweet tooth with sugar alcohol?

The American Diabetes Association claims that sugar alcohols are acceptable in a moderate amount but should not be eaten in excess. In addition, weight gain has been seen when these products are overeaten. Personally, I�m not dipping my sticky fingers into sugar-free candy again. For gastric bypass patients generally the key, as in all eating, must be moderation, not a full bag of jelly beans. And of course, we can always rely on the old advice of conventional dieters, �Hungry for something sweet? Reach for a piece of fruit.�

The other parts are proper and adeqaute physical activity, mental and spiritual well being, and adequate rest. All need to be addressed in order to achieve better health. An important thing I learned while experimenting with diets and other health related approaches is to always pay attention to the signals from the body. It's essential to do this - in order to maintain good health - and adjust accordingly. As one gets better at reading the body, it becomes natural to self diagnose a lot of minor problems (which can become major if not paid attention to) and remedy them by simply adjusting the diet or other aspects of life. Finally, we are all different - what works for one person may not work for another - thus it's important to learn about and experiment with nutrition to find out what works and what does not.

Ginger - Much More Than Just a Spice

Chicken with Mango and Ginger
Ingredients:
� cup olive or vegetable oil
2 cloves fresh garlic, crushed
2 pounds chicken breast fillets, skinned
1 cup peeled and diced mangoes
� cup dark brown sugar
� tsp freshly ground cloves
2 tsp ground ginger
� tsp nutmeg
1 tsp soy sauce
Salt and freshly ground pepper to taste
In a heavy frying pan heat the oil, add the garlic and saut� for a few minutes. Add the chicken fillets and cook for 15-20 minutes until the chicken is cooked through. Meanwhile, blend the mango with the sugar, cloves, ginger, and nutmeg. Pour the mixture over the cooked fillets to evenly cover all the pieces. Add soy sauce, salt, and pepper to taste. Cook 10 more minutes. Serve hot with a rice side dish and/or green vegetable.

Hot Ginger Coffee
Ingredients:
6 tbsp ground coffee
1 tbsp orange peel, grated
1 tbsp ready-made crystallized or candied ginger (available in grocery stores)
� tsp cinnamon, ground
6 cups cold water
Fat free whipped cream, cinnamon sticks - to taste (optional)
Brew the coffee, orange peel, ginger and cinnamon together as usual. Pour into mugs and garnish with whipped cream and cinnamon sticks.

Ginger Thirst-Quencher
Ingredients:
One-inch piece ginger, grated
1 glass chilled/hot water
2 tsp organic jaggery
A few mint leaves
� tsp powdered cumin seeds
� lime
Salt to taste
Mix water, jaggery, cumin seeds and salt. Add the mint leaves and ginger, and squeeze the lime.

Warning:
Though generally safe, ginger in excessive amounts can cause mild heartburn. Pregnant women should consume ginger with caution and avoid after the first trimester. Ginger can interfere with certain medicines or be contraindicated in some conditions.

I Need Some Pots and Pans To Cook In - What Should I Buy?

If you�ve shopped for cookware recently, you may have gotten a headache from looking at all the choices and brands available. And all of them seem to be telling you the same things � I�m the best; I�m a great value; buy me.

What should you buy? Before you start considering your cookware options consider the following five questions.

1) Do you cook for a few people or a lot of people? This will determine how many pots and pans you need and also how big you need them to be.

2) What kind of cooking do you most often do? I like to make homemade soup so a large stockpot is essential for me. On the other hand, I never steam anything on the stovetop (I use an electric steamer) so a stovetop steamer is useless to me. Think about what you cook or what you want to learn how to cook so you can determine what pieces of cookware you�ll need.

3) How important is ease of cleanup to you? If you hate cleanup you should probably buy non-stick cookware. If you want to be able to put your cookware in the dishwasher you�ll need to look at the sets you�re considering to see if it�s advisable. For example, hard-anodized aluminum cookware is a very popular type of cookware but the outside of the pots will change color and darken if you wash them in your dishwasher. I own this type of cookware and I love it. But there are days when I don�t love having to take the time to hand-wash it, but I do because I don�t want it to get discolored in my dishwasher. Most professional cooks prefer stainless steel cookware. It�s nice to cook with but clean-up can be fairly time-consuming.

4) What type of stove do you have? Do you have a smooth-top electric stovetop? If you do, you need flat-bottom pots and pans. I didn�t think about this when I purchased my smooth-top stove. I quickly discovered my pots and pans weren�t flat bottomed and that they didn�t work well on my new stove. As a result I had to go buy new cookware that had flat bottoms. If you have an induction cooktop you needs pots and pans with ferrite in them, which means they need to be magnetic.

5) What is your budget? I highly recommend buying the best quality cookware you can afford. The best quality is not always the most expensive cookware available, but it�s never the cheapest. If you buy a $49.99 set of cookware, you�ll be getting a bargain but you won�t be getting a good set of cookware.

Now that you�ve thought about your needs and know how much you can afford to spend, it�s time to go look at cookware. You�ll likely be using your cookware every day so you want something that you�re comfortable working with. But the number one thing to look for in cookware is weight and heft. Heavier weight cookware won�t warp over time which causes you to lose the flat, even cooking surface on the bottom of your pan; and you can control the heat better in heavier weight cookware. I�m not saying you have to buy cookware that you need to join the gym to be able to lift out of the cupboard but don�t buy cheap flimsy pots and pans.

If a pan feels like you could bend it, don�t buy it. I�m not suggesting you walk into a store, pick up every pot and pan and try to bend it, but look at one of the saucepans. If you push a little on the sides and that saucepan has some �give� to it, it�s not going to hold up well on your stove.

To get a good quality cookware set you�ll probably need to spend a minimum of $200. If you don�t have that much to spend consider buying only the essential pieces you need to get you started such as a 2-quart saucepan, a saut� pan and a stockpot. Add pieces as you can afford them. Although you�ll typically get the best value for your money if you buy a cookware set versus buying the individual pieces don�t buy a poor quality set just so you have an entire set of cookware. You�ll end up spending more money in the long run replacing those pots and pans when they get warped and ruined (which won�t take long).

If you take the time to consider your needs, do some shopping around, and purchase the best quality set of cookware you can afford, you�re likely to be happy with your purchase for a long time.
